Lotus Streusel cake (with lotus swirls throughout the batter).

This streusel cake has two versions: Either make a grown-up version with strawberry jam and a cinnamon streusel or a kid-version with lotus spread and lotus streusel.

Grease a 8″ springform pan with baking spray.
Preheat oven to 190C
Serves 12-15

2 cups flour
1/2 cup sugar
1/2 tsp salt
1 tbsp baking powder
1 tsp cinnamon
2 eggs
1 cup soy milk
1/3 cup canola oil
1 tsp vanilla or 2 sachet of vanilla sugars
1 250g jar of jam or fruit spread  / lotus spread

Streusel

3/4 cup flour   (or 1/2 cup crumbled lotus cookies & 1/2 cup flour)
1/2 cup sugar
1 tbsp cinnamon
1/4c oil or 1/2 cup butter/margarine

Strawberry Streusel Version

1.First, make the crumble. Mix ingredients first with a spoon. Once the mixture is mostly mixed together, rub the crumbs together with your fingers.
2. Combine flour, sugar, cinnamon. salt in a mixer. add eggs and mix
3. Add milk, oil and vanilla
4. Pour the batter into the pan. Spoon the jam/lotus spread in dollops and then swirl to roughly mix the jam/lotus spread into the batter. 
5. Sprinkle all of the crumble mixture onto of the batter.
6. Bake uncovered for 45 minutes or until a tooth pick comes out clean
