Cranberry Almond Granola

Make your own delicious granola at home. I like this granola best on top of plain yoghurt and with a spoonful of pomegranate seeds. The granola is sweet so you wont need to add silvan or honey.

Ingredients

  • 1/4 cup Sunflower Seeds
  • 1/4 cup Pumpkin seeds
  • 1/2 cup Chopped Almonds
  • 1/4 cup Pecans
  • 3 cups Rolled Oats (old-fashioned oats)
  • 2 tsp Cinnamon
  • 1/2 cup Raisins or Craisins
  • 2 tbsp Chia Seeds
  • 4 tbsp Coconut oil or Canola oil
  • 1/2 cup Maple syrup or Agave nectar (or 1/2 cup brown sugar and 2 tbsp water)
  • 1/2 cup Honey
  • 2 tbsp Water
  • Pinch of salt

Instructions

  • Preheat oven to 170C (325F). Line baking tray with baking (parchment) paper.
  • Roughly chop the nuts and put them in a mixing bowl.
  • Add the oats, sunflower & pumpkin seeds.
  • Mix together the syrup ingredients in a microwavable bowl. Heat in microwave for about a minute until warm (not boiling). Stir.
  • Pour syrup over seeds and oat mixture. Stir until all of the nuts and oats are covered in the syrup.
  • Spread the mixture on the lined baking tray, and flatten as much as possible. Sprinkle with cinnamon.
  • Bake for 20 minutes, then stir the mixture (trying to get the oats not to stick to the pan and kind of bake on both sides), then bake for another 20 minutes. Granola should look dark and toasty. 
  • Cool. It will get more crunchy. Then add add craisins/raisins and chia seeds.
  • Transfer to a mason jar or sealed container. Granola will keep for about two weeks.
