Two Minute Honey Cake
Mug cakes are a big trend now on the food blogs. The Kitchn, Spoonful and The Times (UK) have all had features on them lately. There are even books being published on the cute cakes to make with a decent mug and a microwave. They are quick and easy, are mixed all in one cup - with only a fork - and are done in minutes. Instant gooey cake - love it! So here is my Rosh Hashana version: A Honey Cake in a Mug. It's moist and sweet and oh-so-simple. You could serve it as a dessert, have them pre-made for breakfast, or keep the kids busy as you finish making everything else on your Rosh Hashana menu.

- 1/2 tsp instant coffee (mixed with 1/2 tsp boiling water)
- 1 tbsp brown sugar
- 1 egg
- 2 tbsp honey
- 2 tbsp oil
- 4 tbsp flour
- 1/4 tsp cinnamon
- 1/4 tsp baking soda
In a medium sized mug, mix together coffee, egg, brown sugar, honey and oil.
Add 2 tbsp flour and baking soda. Mix well with a fork.
Add the remaining flour and the cinnamon. Mix until smooth.
Place cup on saucer (to catch overflow, and make it easier to handle) and microwave for 1 min- 1 min 20 sec. Microwave times vary. In my microwave, I know this is the time it take to cook an egg. That should be the guide for cooking times in your own microwave. Keep a close eye on the last few seconds to make sure it doesn't overflow.
Allow to cool for 1-2 minutes before eating.
