Nut & Seed Clusters

The recipe comes via Anna Schuchman (UK ACE Lifestyle personal trainer) so they have the whole energy bar good-for-you vibe going on. They are packed with all the nut goodness with no added fat and just a little sugar and some chocolate. The chocolate and the eggs bind the clusters together. Plus, baking nuts and seeds just brings out all of their flavors making them all toasty and lovely. Don't take my word for it, try them yourself.

  • 1 cup sunflower seeds
  • 1 cup pumpkin seeds
  • 1/2 cup sesame seeds
  • 1 cup chopped chocolate
  • 1/2 cup flaked almonds
  • 2 egg whites
  • 1/2 cup brown sugar


  • Preheat oven to 320F/160C. Line baking trays with parchment.
  • In a large bowl, mix all the ingredients together.
  • Using a small scoop or tablespoons, spoon the mixture onto the baking trays.
  • Bake at 160 for 20 minutes.
  • Allow to cool for 5 minutes and then remove to spatula onto a cooling rack.
  • Store in an airtight container. These also freeze well.
